RICE BALLS

– 3 blobs of chilli/lime salsa
– Garlic mayo
– 3 chopped walnuts
– Watercress
– Risotto rice
– Leek
– Stilton

3 rice balls
– Place 3 blobs of chilli/lime salsa on the plate
– Drizzle garlic mayo dressing
– Add 3 chopped walnuts
– Watercress garnish

– Cook risotto & allow to cool
– Sautee leek & add to risotto
– Break up 300g of stilton & add to risotto and mix well
– Form into balls and pané
– Deep fry
