METHOD

– Portion ribs into deep gastro – Add all other ingredients and mix well – Cover with foil – Cook in the oven for 4 hours at 200 degrees – Remove ribs and orange – Thicken with arrow root – Garnish with ciabatta, pea shoots & orange.

– 500ml water
– 400ml soy sauce
– 400ml ketchup
– 500ml orange juice
– 300g caster sugar
– 6 sheets ribs
– 2 tbsp garlic
– 30g fennel seeds
– 1 orange juiced & zested
